Ingredients

  • 2 piece(s) Eggs
  • 1/2 medium Avocado
  • 1 piece(s) Green Onion
  • 1 tsp Mustard
  • 1/4 tsp Salt and Pepper
  • 1/2 tsp Sweet Paprika Powder

Instructions

  1. Hard boil the eggs for 8 minutes.
  2. In the meantime, peel and cut the avocado into small pieces and cut the green onion into rings.
  3. Drain the eggs and refresh with cold water. Then peel and cut in half lengthwise.
  4. Carefully remove the yolks with a small spoon.
  5. Combine the egg yolks, avocado, mustard, salt, and pepper in a food processor and purée until creamy.
  6. Fill a piping bag with the cream and fill the egg halves with it.
  7. Garnish the eggs with paprika and green onion rings.
