Ingredients

  • 30 cup Chopped walnuts
  • 30 cup Chopped pistachios
  • 360 g Unsweetened applesauce
  • 1 piece(s) Egg
  • 150 g Granulated sugar
  • 30 tbsp Vegetable oil
  • 5 tbsp Vanilla extract
  • 220 g All-purpose flour
  • 30 cup Whole wheat flour
  • 10 tbsp Baking powder
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 0.2 tsp Ground cloves
  • 0.5 tsp Ground ginger
  • 60 g Dried cranberries
  • 5 tbsp Orange zest
  • 50 g Cream cheese
  • 30 tbsp Powdered sugar
  • 22 cups Milk

Instructions

  1. Preheat the oven to one hundred seventy-five degrees Celsius. Prepare two loaf pans of the specified size, grease and flour them to prevent sticking.
  2. Toast the chopped walnuts and chopped pistachios over low to medium heat until fragrant, then let them cool.
  3. Mix the applesauce, eggs, granulated sugar, vegetable oil, and vanilla extract until well combined.
  4. Sift together the all-purpose flour, whole wheat flour, baking powder, ground cinnamon, ground nutmeg, ground cloves, and ground ginger.
  5. Add the dry ingredients to the wet ingredients in batches, stirring gently just until no dry flour remains; do not overmix.
  6. Fold in the dried cranberries, the cooled chopped walnuts, the chopped pistachios, and the orange zest.
  7. Divide the batter evenly between the two pans. Bake until a toothpick inserted in the center comes out clean.
  8. Cool in the pans briefly, then remove and let cool completely on a wire rack.
  9. Stir the cream cheese and powdered sugar until smooth, then gradually add the milk and mix until smooth and pourable.
  10. After the cake has cooled completely, drizzle with the glaze and sprinkle with dried cranberries and chopped pistachios. Let it rest for a few hours before serving for best flavor.
