Ingredients

  • 2.4 tbsp Mixed salad greens
  • 2 piece(s) Apples
  • 120 g Toasted walnut halves
  • 240 g Dried cranberries
  • 120 g Fresh pomegranate arils
  • 60 g Red onion
  • 60 g Raspberry vinegar
  • 30 tbsp Extra-virgin olive oil
  • 5 tbsp Dijon mustard
  • 5 tbsp Honey or maple syrup
  • 1/4 tsp Sea salt
  • 1/4 tsp Freshly ground black pepper

Instructions

  1. Wash and drain the mixed salad greens, tear into bite-size pieces, and place in a large salad bowl.
  2. Core the apple and cut into evenly sized small pieces; set aside.
  3. Add the chopped apple, toasted walnut halves, dried cranberries, fresh pomegranate seeds, and sliced red onion to the salad bowl.
  4. In a small bowl, combine raspberry vinegar, olive oil, Dijon mustard, honey (if using), sea salt, and black pepper. Whisk thoroughly until fully emulsified.
  5. Pour the raspberry vinaigrette into the salad bowl. Toss gently so everything is evenly coated. Serve immediately.
