Ingredients

  • 60 ml Fresh orange juice
  • 30 tbsp Apple cider vinegar
  • 15 oz Red onion
  • 1.2 tsp Sea salt
  • 1 tsp Freshly ground black pepper
  • 30 tbsp Extra-virgin olive oil
  • 10 tbsp Dijon mustard
  • 15 cup Fresh cranberries
  • 5 tbsp Honey or maple syrup
  • 1180 g Mixed salad greens
  • 475 g Roasted turkey breast
  • 240 g Canned mandarin oranges or fresh orange segments
  • 120 g Celery
  • 60 g Toasted pecans or walnut halves
  • 60 g Fresh cranberries or dried cranberries
  • 1 tsp Fresh rosemary or thyme

Instructions

  1. Add orange juice, apple cider vinegar, red onion, sea salt, black pepper, olive oil, Dijon mustard, cranberries, and honey or maple syrup to a lidded container and shake until emulsified (or whisk together in a bowl)
  2. Rinse and drain the mixed salad greens, then place in a large bowl
  3. Add the roasted turkey breast, clementine or orange segments, and celery, then gently toss
  4. Plate and drizzle with the vinaigrette
  5. Sprinkle with pecans or walnuts and cranberries to garnish
  6. Garnish with rosemary or thyme and serve
