Ingredients

  • 400 g Canned chickpeas (drained and rinsed)
  • 150 g Roasted red peppers (drained)
  • 30 cup Tahini
  • 30 cups Lemon juice
  • 2 tsp Garlic cloves
  • 2.3 tsp Smoked paprika
  • 1.2 tsp Ground cumin
  • 30 tbsp Olive oil
  • 60 ml Ice water
  • 3 tsp Salt
  • 1 tsp Black pepper
  • 240 g Carrots
  • 100 g Celery
  • 300 g Cucumber
  • 120 g Radishes
  • 75 g Bell pepper (red)
  • 75 g Bell pepper (yellow)
  • 75 g Bell pepper (green)
  • 5 cup Fresh parsley
  • 30 cup Whole chickpeas
  • 5 tbsp Olive oil
  • 5 tbsp Rosemary sprigs

Instructions

  1. Put chickpeas, roasted red peppers, tahini, lemon juice, garlic cloves, smoked paprika, ground cumin, olive oil, salt, and black pepper into a food processor
  2. Blend until uniform, gradually adding a little ice water until smooth and creamy
  3. Adjust salt, lemon juice, or smoked paprika to taste
  4. Wash and peel the vegetables (if needed), then cut into dipping sticks
  5. Spoon the hummus into a bowl and arrange the vegetable sticks around it
  6. Drizzle with olive oil, sprinkle with chopped parsley and whole chickpeas, and garnish with a small sprig of rosemary
