Fish Fillet with Roasted Vegetables

Ingredients

  • 85 g Fish Fillets
  • 1 large egg Egg
  • 85 g Broccoli
  • 2 medium Carrots
  • 1 piece(s) Potato
  • 1 cup Cornstarch
  • 28 oz Bread Crumbs
  • 1 tbsp Olive Oil
  • 1/4 tsp Salt and Pepper

Instructions

  1. Preheat the oven to 200°C / 390°F.
  2. Cut the potatoes into strips and toss with half of the olive oil as well as season with some salt and pepper.
  3. Spread the potato strips onto a baking sheet covered with baking paper and cook on the middle rack for approx. 30 minutes. Turn them on every 10 minutes.
  4. In the meantime, carefully cut the fish fillets into pieces and beat the egg with a fork. For each piece, dip the fish first in the starch, then in the egg and lastly the bread crumbs.
  5. Place the breaded fish fillets onto a second baking sheet covered in baking paper.
  6. Separate the broccoli into florets and cut the carrots into slices.
  7. Mix the vegetables with the remaining olive oil, season with salt and pepper and add to the baking sheet with the fish.
  8. Once the 30 minutes has lapsed, move the chips to the lowest rack and place the fish and vegetables on the middle rack.
  9. Bake both sheets for 15 minutes.
