Sweet potatoes and oranges are a wonderful pairing to pork chops. Enjoy this flavorful dish with a side of brown rice.

Ingredients

  • 2 oz Pork chops
  • 1 piece(s) Sweet potato peeled
  • 1 medium Orange, sliced
  • 1/2 tsp Cinnamon (dash, optional)
  • 1/4 tsp Salt (dash, optional)
  • 1/4 tsp Black pepper (dash, optional)

Instructions

  1. Preheat oven to 350 °F.
  2. In a medium skillet, brown pork chops in a small amount of oil.
  3. Cut sweet potato into 1/2-inch slices.
  4. Place meat and sweet potato slices in a baking dish and top with orange slices; sprinkle with seasonings if desired.
  5. Cover and bake for 1 hour until meat is tender.
  6. Cook pork to 145 °F.
