Ingredients

  • 1 cup Uncooked brown rice
  • 2 tbsp Vegetable oil
  • 2 piece(s) Garlic, peeled and minced
  • 1 piece(s) Yellow onion chopped
  • 1 tsp Bell pepper, cored, seeded, and chopped
  • 1 cup Water
  • 1 cup Fresh tomato, coarsely chopped
  • 1/4 tsp Salt
  • 1/2 tsp Ground cumin
  • 31 g Low-sodium red kidney beans (drained and rinsed)
  • 1 cup Water
  • 1 piece(s) Avocado, peeled, pitted and chopped
  • 2 tbsp Fresh cilantro chopped, optional

Instructions

  1. Put the rice and water in the pot and bring to a boil over high heat.
  2. Turn the heat down to low and cook, covered, until the rice is tender, about 45 minutes.
