Cauliflower can be made into a rice alternative with just a few simple ingredients. Make this fresh-tasting side dish by pairing cauliflower with garlic, onion, and more.

Ingredients

  • 1 tbsp Vegetable oil
  • 1/2 medium onion Diced onion
  • 1 piece(s) Garlic, minced
  • 1 cup Cauliflower (grated or finely chopped)
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1 cup Lemon juice or lime juice optional
  • 2 tbsp Chopped fresh parsley or cilantro optional

Instructions

  1. Heat oil in a large skillet or saucepan on medium heat. Add onion and cook until soft, 3 to 5 minutes.
  2. Add garlic, cauliflower, salt, and pepper. Stir until cauliflower is tender, 3 to 5 minutes.
  3. Stir in lemon juice and sprinkle with parsley, if desired. Serve warm.
