Ingredients

  • 1 tbsp Olive Oil
  • 37.5 g Onion, chopped
  • 2 tbsp Red Chile, seeded chopped
  • 1/4 cup Chili Flake
  • 1/4 cup Red Capsicum, chopped
  • 1/2 tsp Cinnamon, ground
  • 1/2 tsp Cumin
  • 1/2 tsp Thyme, dried
  • 3.77 piece(s) Garlic Clove, minced
  • 1/4 cup Bean, drained rinsed mixed
  • 1/4 cup Lentil, drained rinsed
  • 1 medium Tomato, diced
  • 1 medium Tomato Paste
  • 1 tbsp Flat Leaf Parsley, chopped

Instructions

  1. Heat the oil in a large saucepan over medium heat.
  2. Add the onion, fresh chilli, capsicum and cook until softened.
  3. Add chilli flakes and spices and cook for another minute.
  4. Adjust the heat until low and add the garlic, beans, lentils, tomatoes, tomato paste and remaining oil.
  5. Cover and simmer for 15 minutes, stirring occasionally.
  6. Remove lid and cook for another 5 minutes until thickened.
  7. Stir the parsley through and serve with warm tortillas or steamed rice sprinkled with grated cheese.
