Ingredients

  • 330 g Cod fillets
  • 250 g Cherry tomatoes
  • 4 piece(s) Garlic
  • 3 tsp Fresh rosemary
  • 3 tsp Fresh thyme
  • 1 medium Lemon
  • 30 tbsp Olive oil
  • 1 tsp Sea salt
  • 1 tsp Ground black pepper
  • 1 tsp Fresh basil leaves

Instructions

  1. Preheat the oven to a hot temperature.
  2. Pat the cod fillets dry, season with sea salt and black pepper, and marinate briefly.
  3. Rinse the cherry tomatoes and cut them in half.
  4. Mix minced garlic, rosemary, thyme, and olive oil until well combined.
  5. Line a baking tray with parchment paper and place the cod fillets on it.
  6. Spread the herb-garlic mixture evenly over the surface of the cod.
  7. Arrange the cherry tomatoes around the cod, drizzle with olive oil, and season with sea salt and black pepper.
  8. Top with lemon slices.
  9. Bake until the cod turns opaque and flakes easily and the cherry tomatoes are softened and lightly caramelized.
  10. After baking, drizzle with a little lemon juice.
