Ingredients

  • 1 cup Acorn squash
  • 30 tbsp Olive oil
  • 30 tbsp Maple syrup
  • 2.5 tsp Ground cinnamon
  • 0.6 tsp Ground nutmeg
  • 0.6 tsp Ground ginger
  • 1.2 tsp Chili powder
  • 1.2 tsp Sea salt
  • 0.6 tsp Freshly ground black pepper
  • 1 tsp Fresh rosemary
  • 15 oz Chopped toasted walnuts
  • 15 cup Dried cranberries

Instructions

  1. Preheat the oven to two hundred degrees Celsius, and line a baking tray with parchment paper.
  2. Wash the pumpkin, cut it in half lengthwise, scoop out the seeds and stringy bits, then cut into half-moon slices about one and a half centimeters thick.
  3. Mix olive oil, maple syrup, ground cinnamon, ground nutmeg, ground ginger, chili powder, sea salt, and black pepper.
  4. Add the pumpkin slices to the seasoning and toss until evenly coated.
  5. Spread the pumpkin slices in a single layer on the baking tray, avoiding overlap as much as possible.
  6. Bake until the pumpkin is tender and the edges are lightly caramelized, flipping once about partway through.
  7. Plate and sprinkle with chopped rosemary, chopped toasted walnuts, and dried cranberries.
