Ingredients

  • 25 cup Quick Cooking Rolled Oats
  • 75 g Banana, ripe
  • 92 g Orange
  • 70 g Egg
  • 60 g Yogurt, low-fat
  • 7.5 tbsp Coconut Oil
  • 10 tbsp Cashew Butter
  • 20 tbsp Honey
  • 1/2 tsp Cinnamon

Instructions

  1. Mash the banana with a fork. Add the egg, rolled oats and yogurt, and mix well.
  2. Heat the oil in a small pan and add the mixture. Bake either one large or three small pancakes in the pan.
  3. For the cashew sauce, half the orange and squeeze the juice from one of the halves.
  4. Mix the juice with the cashew butter and honey and season with cinnamon. Heat the sauce on the stove or in the microwave for several minutes until it starts to become creamy.
  5. Serve the pancakes together with the sauce.
