A spicy and savory one pot dish that the whole family will enjoy. Add some cayenne pepper for an extra kick.

Ingredients

  • 1 cup Brown rice, instant
  • 2 cups Chicken broth, reduced sodium
  • 1/2 medium onion Dehydrated onion minced
  • 1/2 tsp Garlic powder
  • 1/4 tsp Ginger ground
  • 2 tsp Red pepper (optional)
  • 2 piece(s) Sweet potato (peeled and diced)
  • 15 cups Tomatoes, low-sodium (diced, with liquid)
  • 1/4 tsp Salt (optional)
  • 8 tbsp Peanut butter (creamy, reduced-fat)
  • 1 cup Skim milk
  • 3 cup Baby spinach, coarsely chopped
  • 2 tbsp Peanuts, chopped
  • 2 stalks Green onion (optional, thinly sliced for garnish)

Instructions

  1. Combine first 9 ingredients in a soup pot. Bring to boil, then turn down to medium low, cover and simmer for 10 minutes.
  2. Stir in peanut butter and milk. Return to gentle simmer and cook uncovered for 5 minutes.
  3. Stir in spinach and cook until wilted, 2 to 3 minutes. Remove from heat.
  4. Ladle stew into bowls and top with peanuts and green onion, if desired.
