Ingredients

  • 85 g Roast Chicken
  • 3 cup Lettuce, washed
  • 1 medium Tomato, sliced
  • 1/2 medium onion Spanish Onion, halved sliced
  • 1 cup Peanut, roasted and crushed
  • 1 tsp Chili Powder
  • 4 cubes Green Chilies, sliced
  • 1 tbsp White Vinegar
  • 4 cubes Tamarind Juice
  • 1 tbsp Lime Juice
  • 2 tbsp Caster Sugar
  • 2 tbsp Fish Sauce
  • 1/4 tsp Sea Salt

Instructions

  1. To make the dressing, mix all the seasoning together in a small pot and bring to the boil. Remove from the heat and leave to cool or refigerate.
  2. Remove the chicken from the bones and slice thickly across the grain.
  3. Put the chicken, onion and tomato in a bowl, drizzle with the dressing and gently toss together.
  4. Put the lettuce on a serving plate and arrange the chicken salad on top. Sprinkle with peanuts to serve.
