Ingredients

  • 720 ml Low-sodium chicken broth
  • 113 g Lean ground turkey
  • 850 g Low-sodium pumpkin purée
  • 15 tbsp Maple syrup
  • 1/4 tsp Black pepper
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 0.5 tsp Ground cloves
  • 40 g Onion
  • 40 g Carrot
  • 30 cups Coconut milk
  • 30 cup Light cream
  • 15 cup Roasted pumpkin seeds
  • 5 cup Fresh parsley, chopped
  • 1 tsp Gingerbread man cookie

Instructions

  1. Sauté onion and carrot in a pot with a little olive oil until the onion is soft
  2. Add ground turkey and cook until it changes color
  3. Add low-sodium chicken broth and bring to a boil
  4. Stir in pumpkin purée, maple syrup, black pepper, ground cinnamon, ground nutmeg, ground cloves until well combined
  5. Reduce to low heat, cover, and simmer for a while
  6. Blend until smooth with an immersion blender, or blend in batches in a blender
  7. Taste and adjust sweetness or saltiness; stir in all coconut milk or all light cream and warm through
  8. Ladle into bowls and top with roasted pumpkin seeds and chopped fresh parsley; serve with gingerbread cookies if desired
